Chili-Lime Chicken Kabobs
Makes 4 servings
3 tablespoons olive oil, 1 1/2 tablespoons red wine vinegar, 1 lime juiced, 1 teaspoon chili powder, 1/2 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, cayenne pepper (to taste), salt and black pepper (to taste), 1 pound skinless boneless chicken breast halves – cut into 1 1/2 inch pieces, skewers
In a small bowl, whisk together the olive oil, vinegar, and lime juice. Season with chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Place the chicken in a shallow baking dish with the sauce, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
Preheat the grill for medium-high heat. Thread chicken onto skewers, and discard marinade.
Lightly oil the grill grate. Grill skewers for 10 to 15 minutes, or until the chicken juices run clear.
Serve and enjoy!
These burgers always turn out just right. Note that much of the fat will drip off into the grill but still keep the burgers nice and moist.
1 ½ pounds ground chuck (80% lean), canola oil, garlic salt, coarse ground pepper, Hamburger buns brushed with melted butter or canola oil
Toppings: Ketchup. mustard, sliced cheddar cheese, lettuce, tomato, onion, etc…
Form beef into 4 patties. Make sure to work meat as little as possible to avoid toughening it.
Make a deep well in center of each burger with your thumb (this will help avoid having it “puff up” during grilling). Season both sides of each patty with garlic salt and pepper. Heat gas grill on high or allow coals on charcoal grill to get to the “orange glowing” stage. Grill burgers on first side for approximately 3 minutes or until slightly charred on “down” side (try not to peek before 3 minutes).
Flip burgers and grill for another 4 minutes for medium-rare. NOTE: If you are adding cheese, grill for only 3 minutes then put cheese on and grill for another minute or so until cheese has started to melt.
Set burgers aside and put buns on grill, cut and buttered/oiled side down. Grill buns for a minute or so, watching closely so they do not burn. Put burgers on buns and add toppings.
